Foodborne disease due to Salmonella and Shigella are among the major challenges worldwide. Evaluation of the current safety status of foods, including meat and meat products, is a pro-active measure to minimize the possible danger due to associated food borne pathogens. To this effect, the microbiological survey of Shigella and Salmonella in meat samples collected from abattoir in Ethiopia. As Ethiopia is one of the top cattle rearing country in Africa, there is a deep rooted traditional trend of eating raw meat in the country which has a series health problem from microbiological points of view. In this work eight salmonella were isolated with the help of biochemical and API 20 kit. Hence I hope this book points the microbiological quality and safety, to create awareness for people eating raw meat, Students and Researchers.
